Egg Fried Rice with Peas

Quick fried rice with scrambled egg and sweet peas. Best made with leftover rice from the night before.

Instructions

Heat a non-stick pan with a tiny bit of oil over medium-high heat.

Scramble the egg and break into small pieces. Set aside.

Add leftover rice and peas to the pan. Stir-fry for 3 minutes.

Return the egg to the pan, add soy sauce, and toss to combine.

Serve with a few cherry tomatoes on the side.
